Santoku knives are Japanese all-rounders that excel at three cutting techniques: expertly mincing garlic, slicing cucumber, and dicing onions. The hollow edge blade has small indentations, aka grantons, which prevent food from sticking while cutting.  Pro Le Blanc Slim knives feature a medium-sized handle, a blade profile that is 9% smaller, and a weight that is 24% lighter than our original Pro knives.
